Cold Infusion with Rich'n Smooth


INGREDIENTS

RECIPE BASED ON: 1kg of Rich'n Smooth Tropic

Lemongrass - 3 stalks
Coffee Beans - 40 g
or Vanilla Beans - 1 stalk

Whipped icing with soft peak


DIRECTIONS

LEMONGRASS
1. Cut lemongrass into thin slices and place into plastic container
2. Pour the liquid Rich'n Smooth on top and seal with lid
3. Shake well and leave for at least 12 hour in refrigerator
4. Remove the lemongrass by using a sieve
5. Whip the product to a soft peak

COFFEE BEANS
1. Crush coffee beans and place into plastic container
2. Pour the liquid Rich'n Smooth on top and seal with lid
3. Shake well and leave for at least 12 hours in refrigerator
4. Remove the coffee grind by using a sieve
5. Whip the product to a soft peak

VANILLA BEANS
1. Cut vanilla bean lengthwise and remove the seeds
2. Place both the seeds and vanilla stalk into plastic container
3. Pour the liquid Rich'n Smooth on top and seal with lid
4. Shake well and leave for at least 12 hours in refrigerator
5. Remove the vanilla stalk manually (do not sieve)
6. Whip the product to a soft peak

TIPS & SUGGESTIONS

You can leave the product up to 72 hours infused prior to whipping.
The taste will be stronger the longer you keep it infused.
Other combinations: Orange, Lemon or Lime peel, Chili, Peppermint.
For woody herbs (Cinnamon, Star Anise, etc.) we recommend the warm infusion method (essential oils will be released).
Warm Method: Heat 10% Rich'n Smooth with the herb up to 60-70C and leave for 1 hour.
Add the remaining Rich'n Smooth and infuse for another 12 hours in the refrigerator.
